Succotash and Corn Bread!

If you follow me on instagram, you know that I was super excited to buy a cast iron skillet which I have been wanting forever. So the next day, I promptly made skillet corn bread. Keeping my promise of super healthy salads, I made a side of succotash. Corn bread recipe can be found here. Just use a skillet instead of a muffin pan. Keep reading for the succotash!

Ingredients -
Lima Beans/ Edamame beans - 1 cup
Corn - 1 cup
Tomato - 1
Onion - 1
Taco seasoning - 2 tsp
A little bit lemon juice

Method -
 Boil the lima beans and corn till they are soft. Saute the onion and tomato till they are a little browned. Mix all of them together in a big bowl. Add a dash of  taco seasoning and lemon juice. Add salt to taste and serve. The succotash can be eaten alone or with a side of brown rice. I opted to serve it with a couple of slices of the corn bread and it turned out to be a hearty meal!  Go with your gut on how much you want of each ingredient.
