Vermicelli Upma

It a Monday Midday and I know you are looking for lunch recipes for the rest of the week. Here is a tasty idea.

So simple.
1 cup vermicelli
Some peanuts
Some Mustard seeds
Two chillies
1 tbsp ghee or butter
Some oil
A pinch of turmeric
Some lime juice (optional)

Wasn't that the most imprecise bunch of ingredients ever? You can't screw this up, I'm telling you.

1. Heat ghee in a frying pan and fry the vermicelli till its golden brown.
2. Transfer it to a plate.
3. Heat oil in a frying pan and add mustard seeds.
4. When the mustard seeds splutter, add peanuts and fry.
5. Slit the chillies and add them to the oil.
6. Add the roasted vermicelli to this and add water just to the surface of the vermicelli.
7. Close with a lid and let the vermicelli soften to noodle consistency.
8. When the vermicelli is soft, add salt and lime juice and mix evenly.
9. Let all the water evaporate and then serve with coconut chutney. (or eat it from the frying pan, plain like I did)

Tada.. easy weekday lunch for one.
