Polenta Fries!

My monday mornings are healthy. I eat oats with non fat milk. I try to work out. My friday evenings on the other hand... Lets just say  there are a lot of potatoes involved. Fried potatoes. Sigh. Anyway this week, I ran out of them (gosh!) so I had to look for some more creative options. Little did I think I would find something that was healthy also.







A week back, I bought a packet of  pre-cooked polenta from Trader Joe's. With that, fries were very simple to make. Slice them into fry-size pieces. Spray with oil and season with a lot of salt and pepper, otherwise it tends to be a little bland. Bake in a pre-heated oven for 20 - 30 mts.



They are very crunchy on the outside and soft on the inside. I still find them not as close to actual fries, but they are great for something to nibble on. After munching on a few with salt and pepper, I got up to make some red pepper dip and the taste was so much better. Nothing groundbreaking - just mix some red pepper, onion, tomato , salt and hot sauce in a mixer.
