Orange Scones the easy way!

The trip to Farmer's market on sunday left me with a lot of fantastic smelling oranges in my pantry. It was easy to inspire myself to make some orange scones.




Ingredients :
2 1/2 cups Multigrain baking flour (Trader Joe's)
1/4 cup Butter
1/4 cup Sugar
1/2 cup Yogurt
Zest of half an orange (medium size)
2 tbsp orange juice
1 tsp Vanilla extract
1 tsp Baking Soda
1/2 tsp Salt
2 eggs

In a mixing bowl, mix all the dry ingredients together. Add the yogurt and eggs last and mix them together. It has to be a soft moist dough. Mine was very sticky, so use some extra flour to make it workable. Grease a cake pan and spread the dough in the pan. Bake in a preheated oven till the top is golden brown ~ 20 - 25 mts. Keep an eye on it though from 15  mts. I placed the cake pan on the lower rack for 10 mts and the top rack for 10 mts. I don't know if it will make a difference but it made my scone cake (?) cook perfectly through.  Remove and serve warm with jam. I did not make a glaze as it would have made it too sweet for breakfast.


Scones are not meant to be very sweet, hence the pairing with jam and milk.  I had these scones after dunking them in milk which made it not cloying yet not overtly sweet as with a glaze. Try it and let me know how it goes!
