Cornbread Muffins

The past few days have been just so busy that I barely have the time or the energy to make a good dinner. After consecutive days of take-out from Chipotle, I decided to make these very simple cornbread muffins. The result was very tasty and very filling.


This is the only picture we managed to take as we went at it and were done with 2 batches of the muffins in about 60 seconds. I followed this recipe. But left out the sugar and honey and added onions and red peppers instead. In a choice between sweet and spicy, I always go for spicy. Do tell me how this recipe works out for you.
