Healthy Apple Bread!

If you have read my tweets, you will know I was ready to give up baking just looking at the quantities of butter involved! My dear friend, Ramya offered this butter-less egg-less recipe for an apple bread to satisifies my bake-craving and sweet craving at the same time.



Ingredients -
Apple - 1
Oats  - 1 cup
Sugar  - 1 cup
Yogurt/ Curd - 1/2 cup
Multi Purpose flour - 3/4 cup
Wheat flour - 1/4 cup
Oil - 3 tsps
Vanilla extract - 2 tsp
Salt - 1tsp
Cinnamon powder - a pinch
Baking soda - a pinch

Steps -
1.Grind the oats into a coarse powder. Add flour, wheat flour and baking soda to the powdered oats. Mix well and keep aside. - Dry mix
2.Powder the sugar with cinnamon. Chop the apple and add this to the sugar along with the oil and yogurt and puree the entire mixture. - Wet mix
3. Mix the dry and wet mix together. Throw in some walnuts or any other nuts you would like to add.
4. Grease a loaf pan and pour the batter into the pan.
5. Bake in a 350F preheated over for 30 mts or till the knife comes clean. Wait for the gorgeous golden colour on top.
6.Cool, slice and serve. Voila!
You could also try this with bananas. You can add anything from raisins to cranberries to choco chip.. Enjoy!
